I test drove a Polestar 2 yesterday and had exactly this problem: every time I said 'OK Google' to talk to the car, my android phone (Google Pixel) responded, usually with a different response to the car, so it was a bit chaotic.

Anybody know whether there will be some way to let my phone know that Polestar should take priority when I say "OK Google" in the car?

A familiar problem at home with the multiple Google Homes I have. Thankfully the button on the steering wheel solves the issue.
