For those buying a new iPhone (perhaps a 17, 17 Pro, 17 Pro Max or Air), please remember to disconnect your Digital Key and sign out of the app before wiping your old phone. This should make it easier to pair your new phone. Yes, there are remediation steps if you forget to do this, but it's just plain easier to disconnect your old phone before you format and replace it ;-).

With the more current versions of the iOS app and the car software, you can now "break" the pairing from either end (the phone or the car). Whereas previously, it had to be unpaired in the app only, so if your app was already gone (on your old phone that you no longer have) you were screwed.

Without access to the previously-paired app/phone, you can still unpair from the car's IT screen for that profile and then install the app and pair it using the steps below:
  1. In the car, navigate to Profiles (top-right of the Home Screen), then tap your profile, then "Digital Key and remote functions", then your phone's name, and tap "Unpair this phone".
  2. If you already have the app installed on your phone, sign out and uninstall the iOS app.
  3. Navigate to the phone's Bluetooth list (at the OS-level) and "forget" any Polestar-related entry. Typically this is "Polestar 2" and "Polestar2".
  4. Install the iOS app fresh from the App Store.
  5. Sign in to the iOS app with your Polestar ID.
  6. Start the pairing process in the app and on the car's IT screen from the "Digital Key and remote functions" screen. (be sure you have all registered key fobs in the car with you)
  7. The app should ask for permissions for a few things and the pairing /should/ work.
I took my own advice and used the above steps to transition from my iPhone 16 PM to my new 17 PM and it worked first time.
