I'm also a fan of the OPD mode, but occasionally on the highway I'd like to have the option to turn it OFF, perhaps with steering wheel-mounted paddles like on the Kia EV6.

100%. My commute AM & PM involves normal roads for a bit, then highway, then normal roads again.

Every time I'm entering the highway I need to go into the menu and turn off the OPD so the car can coast. Every time I get off the highway I do the same and turn it back on again.

A button on the back of the steering wheel or such would definitely be less inconvenient.

Every time I go on the highway I just engage ACC, so what the OPD setting is is irrelevant.
 
I just drive all day on the highway with OPD on high… never makes my foot tired. Once you’re used to it, you’re used to it!
I suppose but I think you're leaving some efficiency on the table by not coasting (may not matter?) ... I've never had a car that effortlessly coasts like this one.

I can live with leaving some efficiency on the table considering that summer highway driving is yielding well over 4mi/kWh in my dual motor...

I genuinely think the difference between the various OPD options and coasting will be so negligible, I'm yet to find any compelling evidence that coasting will save more than nth's of a kWh in most circumstances.

As someone else pointed out too, I use ACC on the highway so my OPD setting becomes irrelevant...

I’ve noticed no change in efficiency, in fact this car is the most efficient EV I’ve ever driven. I do maintain a constant speed, however, except when passing or so forth. And I leave plenty of following distance, again except when passing. I feel more efficient driving by feel than using ACC or letting it coast, as I let it slow slightly on big climbs and that keeps the overall efficiency up. Then when I want to pass someone a dip of the toe and I’m off… it’s always putting a smile on my face :) ACC works too hard to maintain speeds on uphill and gains more speed than I’d like on downhills. My lifetime efficiency in my single motor is 4.2 mi/kWh, and that includes winter and ski trips!
 
Wow. My first car with ACC was a 2007 Volvo S80, and since then I've never even looked at a car that didn't offer it. And to think back then it wasn't even full start-stop. It would cut out at 15mph.
My 2017 Volt had it and I honestly couldn't care for it and wouldn't pay extra for it.

It also had a heated steering wheel (first time I've experienced it) and THAT I would always have on a future car.

I had that car too, and again I wouldn't even have considered it if I couldn't get ACC. It wasn't my first car with a heated wheel, and while I absolutely love that, I don't think it would be a deal breaker like ACC. Heck, after 5 years of Pilot Assist, even when I drive our Bolt, I have think ... oh yeah, I have to steer 🤣

I'm sure it's better on the P2. On the Volt, I found it too aggressive. It'd brake too hard when someone went into my lane and the car was forced to slow down ... then when he left the lane, it'd accelerate too hard.

I find the P2 a little better than the Volt/Bolt in that it "sees" farther down the road. Taking off more slowly is all related to saving juice/gas.
